Yummy Apple Muffins!



I made this recipe up a few months ago, and I make them now quite often! In fact, they are on the menu a few mornings on our Mission trip to Alaska that my family and a few others are going on this month! Click here to find out more about what we are doing there. Please keep us in your prayers as we reach the people in Alaska. Anyways, thought you might enjoy this recipe! =)


 

Ingredients:
4-5, Medium to small apples finely diced
3 Cups Applesauce
1 Cup Soy milk
4 Tbs. Lemon juice
4 Tbs. Agave syrup (optional)
1 Tbs. Vanilla favoring
4 Cups Flour
3 Cups Sugar
4 tsp. Non-aluminum Baking powder (like Rumford) 
1 tsp. Salt

Peel, and finely dice apples. Mix all wet ingredients together well, then add the dry ingredients, and mix together till all is combined. Pour into oiled muffin tins. Bake at 350 for approx. 40 minutes, or until golden brown. Let cool thoroughly on cooling rack before serving. Makes about 30 muffins.

Zucchini Patties


Wow! I guess it's been awhile since I've posted on here! It's been a busy Summer! Hope you enjoy this recipe! =)

This time of year, everyone who grows a garden usually has an over-abundance of Zucchini! These wonderful veggie owners, are always trying to give them away, or come up with some  new, genius way of using it up!
So thought I'd share this scrumptious Zucchini recipe with you! They are very yummy, and a good way to use up that Zucchini that just keeps coming! =)

                                                   Zucchini Patties


Ingredient list:
2 cups grated Zucchini
2 TBS. McKay's Beef style seasoning
1-small onion chopped
1/4 cup nutritional yeast flakes
1/2 cup quick oats
1 1/2 cups flour
1/2 tsp. salt
1/2 tsp. garlic salt
2 TBS. Gluten Flour

Directions:
Grate the 2 cups Zucchini into a mixing bowl, and add chopped onion, and seasoning. Set aside for approx. 15 min. to develop the liquid. In a separate bowl, mix together the remaining dry ingredients. Thoroughly mix in the dry ingredients into the wet. Set aside for about 30 min. so it will firm up. Set oven at 350-400.

Form patties with a large mouth jar ring, to make burger-size patties. Place on oiled cookie sheet. Bake one side for approx. 15 min. Then flip them over, and bake on other side for approx. another 15 min.  They will be firm and brown.

Cooks notes:
This recipe makes about 10-14 patties, depending on how thick you like them. My family likes to make about 5 times this recipe, and stick them in the freezer. Makes a tasty, quick and easy lunch, on a busy day!

New Blog!


I am so excited about this new blog!  I just love working in the kitchen! It is so wonderful to sit at a meal and see the satisfied, happy faces of those enjoying the labour of your hands! And to know that it is healthy for them!

It has been so hard to decide what recipe to share first. But I think I have decided on one!

                             Tofu Cottage Cheese

Ingredients list:

1 (16 oz) package silken tofu (Extra firm)
1 cup Tofu Sour Cream (can use veganaise)
1 1/2 tsp. onion powder
1/2 tsp. garlic powder
1 tsp. salt
1 Tbs. lemon juice (optional)
1 tsp. dried chives or dill (optional)

Directions:

Mash tofu with fork, and stir in remaining  ingredients, except for the dried chives. If desired, the dried chives may be sprinkles on top!

 Cooks note....

I know this is a very simple recipe, but it can be used for many different things! You can eat it just plain, or layer it in a lasagna, on lettuce, or stuffed in tomatoes! My family just loves it! Mom and I are always stirring some up! And everywhere we take it, someone is sure to ask for the recipe! It is now at our churches fellowship meals very often!

Note: When we layer it in a lasagna, we like to mix it with a can of spinach! Very yummy! :P
